Today we're back at 77 Harbour Square showing you how to make a quick and healthy Chickpea/rice dish.

Chickpea Surprise

2-3 tblsp Olive Oil

1 small onion, Diced

1-2 garlic cloves, Chopped

1-2 cans of tomatoes chopped (or a couple of tomatoes diced)

1/2 cup of white wine OR broth

1 can of Chickpeas, Rinsed

1 cup of Feta Cheese , crumbled

1 cup of Kalamata Olives, Whole or Chopped

Bunch of Spinach, Washed and Chopped

Spices (OPTIONAL) basil, oregano, pepper, hot chili pepper

Heat the oil, add onions and garlic to brown. Once brown, add tomatoes and wine or broth, simmer for 10 mins. Add chickpeas, cook for 5 mins. Add feta and olives, mix in. Add spinach and mix well. Add spices as desired.

Serve over rice or alone – Enjoy!
